Baked Fennel Olives
This is a nice little snack for when people come around. It’s simple to make and if you put it on just before they come around the house will be filled with the smell of beautiful baked olives.
300g Kalamata Olives with the pits.
2 Teaspoons Fennel Seeds
2 Tablespoons of Olive Oil
Orange or Lemon peel
Put the olives into a small oven safe dish, you can include a small amount of the brined water as it will help keep the olives moist. Add the olive oil, fennel seeds and a couple of pieces of the citrus peel.
Heat the oven to 180 degrees and put the cooking dish into the oven to bake for 15 minutes. The olives will start to shrivel a little so give them a stir after 10 or so minutes.
Serve in the baking dish or transfer to a serving dish.
