Choc Chip, Hazelnut and Peanut Butter Cookies
Crumbly, nutty goodness. These cookies will have you finding it hard to stop at one!
1/2 cup Cashews
1/2 cup Coconut
1/2 cup Hazelnut Meal
2/3 cup Peanut Butter
2 tablespoons Maple Syrup
1/2 cup chopped Dark Chocolate Buttons
Coconut oil (if needed)
Pre-heat oven to 170 degrees and line a tray with baking paper.
Blitz together all ingredients (except chocolate and coconut oil) in the food processor until a dough like consistency. If your dough is a bit crumbly, add coconut oil and blitz until sticking together.
Stir in the chocolate pieces.
Shape into cookies and place onto tray.
Bake in the oven for 10-15 minutes or until golden. Cool on a cooling rack.
Due to the nut content, these cookies are designed to be crumbly, they are not chewy.
