Carrot Pita Pockets

This is a bit of a quick fire lunch when you just can't be bothered. You'll be crunching away in under 5 minutes and wondering when you'll stop eating.


4 grated carrots

Whole grain pita pockets

The juice of 2 oranges

1 tablespoon poppy seeds

1 tablespoon sesame seeds

Bunch chopped coriander

1 tablespoon olive oil

Grind of salt and pepper to taste.


Dry roast the poppy and sesame seeds in a fry pan. 

Combine all ingredients and stuff the pita pockets with the filling.
