Banana Oat Pancakes

Great quick fire weekend breakfast for kids and adults.

1 ripe banana, mashed

1 cup oats

1 cup of milk

1 egg, lightly beaten

1/2 cup wholemeal flour

1 tsp baking powder

1/2 tsp cinnamon

1/4 cup raisins

Coconut oil for cooking

 

Place all dry ingredients in a bowl and combine. Add the milk slowly and add the egg once combined.  

Liberally coat the frypan with the coconut oil and heat over medium heat. Ladle palm sized pancakes into the pan and cook until golden brown (3 minutes each side).

Makes 15 palm sized pancakes. Great for freezing.
