Banana Energy Bars

You can individually wrap these in al foil and freeze. When you're ready stuff one into your cycling jersey for a easy to get down energy punch when you're on the road.

Ingredients

450g mashed ripe bananas 

3 cups rolled oats

1/2 cup LSA*

1/2 teaspoon cinnamon 

1/2 cup dried cranberries

1/4 cup honey

1/4 cup coconut oil

Method

Pre heat oven to 160 degrees.

Combine all ingredients in a large bowl and mix well. 

Tip into a baking paper lined baking tin and flatten to 2cm high and bake for 60 minutes or until golden. The key is to not over cook these so they're easy to get down. Cut into individual portions when they're still warm and allow to cool on a wire rack. 

* substitute coconut for LSA for a nut free option.
