Blueberry and banana muffins

Loving these sugar free muffins. A good go to snack with plenty of energy from the bananas.

Ingredients

1 punnet of blueberries (or 1 cup frozen)

4 ripe bananas

4 eggs lightly beaten

3/4 cup coconut flour

50g coconut oil

1/2 lemon 

Method

Pre heat oven to 180 degrees and grease a 12 pan muffin tin. 

In a mixing bowl, mash the bananas and add the juice of the lemon. Sift in the flour and gently combine. Add in the eggs, coconut oil and blueberries and gently combine. Evenly spoon the mixture into the muffin tin and bake for 1 hour. Leave in the tin to cool for 5 minutes, then transfer to a wire rack to cool.
